{"id":35,"date":"2008-04-17T18:07:22","date_gmt":"2008-04-17T22:07:22","guid":{"rendered":"http:\/\/www.eyoungwon.com\/journal\/?p=35"},"modified":"2008-04-17T18:07:22","modified_gmt":"2008-04-17T22:07:22","slug":"apple-blueberry-oatmeal-pancakes","status":"publish","type":"post","link":"https:\/\/eyoungwon.com\/journal\/apple-blueberry-oatmeal-pancakes\/","title":{"rendered":"Apple-Blueberry Oatmeal Pancakes"},"content":{"rendered":"<p><font class=\"df\" size=\"2\"><strong><font color=\"#333333\">Apple-Blueberry Oatmeal Pancakes<\/font><\/strong><\/font><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 egg whites<br \/>\n1 cup apples, peeled sliced and pre-cooked*<br \/>\n\u00c2\u00be cup oatmeal<br \/>\n\u00c2\u00be cup multi-grain pancake mix<br \/>\n2 scoops vanilla protein mix<br \/>\n2 tablespoons vanilla or plain nonfat yogurt<br \/>\n1 tablespoon cinnamon<br \/>\n1 tablespoon vanilla extract<br \/>\n\u00c2\u00bc teaspoon nutmeg<br \/>\n1\/2 cup cold water<br \/>\n1 cup blueberries, rinsed well<br \/>\nNonstick cooking spray<\/p>\n<p>Strawberries, bananas, kiwi slices, blueberries and apples with a dollop of nonfat yogurt and cinnamon make for a great topping!<\/p>\n<p>*To pre-cook apples simply microwave on high for two minutes.<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>1.\u00c2  In a large mixing bowl, lightly beat egg whites then add apples, oatmeal, pancake mix, protein, yogurt, cinnamon, vanilla extract and nutmeg. Slowly add \u00c2\u00bc c. water and mix until batter is a thick consistency, (spatula should stand upright in batter.) If batter is too thick add a little more water; if it is too thin add a little more oatmeal.\u00c2  Next, gently fold in blueberries.<\/p>\n<p>2.\u00c2  Preheat large skillet with nonstick spray over medium-high heat. Place four large spoonfuls of batter in hot skillet, pancakes should be approximately 3 inches in diameter. Check pancakes in two-three minutes by sliding spatula under checking for desired brownness.\u00c2  Flip pancakes and repeat to other side. Repeat; makes 5-6 pancakes.<\/p>\n<p>3. Serve hot, top with more cooked apples and blueberries, honey, low-fat syrup or even low-fat yogurt.
